• 1 tablespoon butter
• 4 mini peppers, chopped
• ¼ cup onion, chopped
• 1 to 2 eggs
• ½ cup baby arugula
• A handful of microgreens
• Balsamic glaze or hot sauce, for topping

Instructions
1. Sauté the veggies:
Heat a skillet over medium heat and melt the butter. Add the chopped peppers and onions. Sauté until softened and fragrant, about 4–6 minutes (or to your preferred doneness).
2. Cook the eggs:
Push the vegetables to one side of the skillet or remove them temporarily. Crack the eggs into the skillet and cook over medium heat until done to your liking (scrambled, fried, or over easy).
